Teriyaki Sauce (GLUTEN-FREE, YEAST-FREE, DAIRY-FREE, EGG-FREE, CORN-FREE) *contains soy

1/2 Cup Gluten Free Soy Sauce (San- J Tamari)
1/4 Cup of Brown Sugar
2 T. Oil
1/4 t. Ground Pepper
1/2 Clove Garlic (We used minced garlic from a jar- the refridgerated kind, not dried.)
1 t. Dry Ginger

Mix well and let set 20-30 min.
Serve over rice, chicken, and vegetables.
DELICIOUS!!!
Refrigerate and store unused portions.

Waffles (GLUTEN-FREE, YEAST-FREE, DAIRY-FREE , SOY-FREE, CORN-FREE) *contains egg

3 3/4 Cup Rice Flour
1/4 Cup Tapioca Flour
2 teaspoons Guar Gum
1 teaspoon Baking Powder
1 teaspoon Salt
1 teaspoon Baking Soda

Stir.
Pour in:
4 cups Water
4 Eggs
2 Tablespoons Butter
2 Tablespoons Lemon Juice
Stir.


Cook on hot oiled waffle iron.
We love these with butter and applesauce, pureed peaches, cinnamon and sugar, yogurt or good old maple syrup!

Gluten-Free Italian Herbed Chicken

1/2 C. rice flour
1/4 t. pepper
1/4 t. garlic powder
3/4 t. salt
1/2 t. minced onions
1 t. parsley flakes

Mix. Dip chicken in mixture. (Can dip chicken in egg whites before the dry mixture.) Bake according to size of chicken pieces. I like to cut breasts into strips to shorten cooking time. (It seems I'm always rushing to get the food on the table!)

We eat this chicken with Prego Traditional Spaghetti Sauce (a great gluten-free product) heated and poured over it. Then we top with mozzerella cheese.

(For some reason we ALWAYS have cooked baby carrots with this dish! I boil the carrots, then top with 1/4 c. brown sugar + 1/4 c. margarine or butter. I let that simmer for 3-5 minutes and sprinkle with parsley.)

Aunt Jenny's Delicious GF Bread (from Jamie Owen)

2 c. brown rice flour
1/2 c. sorghum flour
1/2 c. soy flour
(* You can be flexible with this flour mixture. Jenny didn't have any soy flour so she used more of the others to equal 3 cups. She says using 2 cups white rice flour and 1 cup cornstarch made an excellent soft white bread!)
2 1/2 t xanthum gum
1 t. instant yeast
3/4 t. salt
1/4 c. melted butter or vegetable oil
2 eggs+ 2 egg whites
1 t. vinegar
1 1/2 c. warm water

Combine dry ingredients.
Add wet ingredients.
Mix about 5 minutes.
Let rise 15-20 min.
Put in 2 well greased pans.
Let it rise more.
Bake at 375 degrees for about 30 minutes.

Banana Muffins (GLUTEN-FREE, YEAST-FREE, DAIRY-FREE , SOY-FREE, CORN-FREE) *contains egg

This recipe is sugar free accidentally! I absentmindedly forgot to add sugar the first time I concocted this recipe. However my kids love them! They ate them up so fast like this- so I haven't tried making them with sugar.


Blend in a blender:
4 ripe bananas
3 eggs... Let this sit while mixing dry ingredients.


Mix dry things:
3 3/4 c. rice flour
1/4 c. tapioca flour
2 t. guar gum or xanthum gum
1 t.salt
2 T. baking powder


Pour in blended ban. & eggs.

Then add the following:
1/3 c. oil
1 1/2 c. water


Stir it all together.
Bake in greased muffin tins at 425 Degrees F. til done, about 15 minutes.
Serve warm with butter or applesauce. Yum!

A list of gluten free things that every GF person should know!





Ice Cream- Breyers and Dreyers are gluten free except for obvious things like brownies, chocolate chip cookie dough (sniff) cake batter, oreos etc. etc. etc.

Lays Chips- So simply gluten free! Cheetos and Cheetos Puffs too!

Eggo Syrup- Out of all the Eggo products, the syrup is the only gluten free thing we've found so far.

Jello & Jello Pudding (Jello Tapioca too!)- Delicious and gluten free. (which is good if anyone has an operation or anything)

Sunkist Gummy Snacks- Really really good! If there is any at our house, they completely disappear.

Frosties- the kind from Wendy's Vanilla and Chocolate.

Act II popcorn- all except "Extreme Butter".

Kraft Marshmallow- All of them! (yay!) Chocolate Vanilla Swirl, Strawberry, the whole works!

Frosting- Betty Crockers Chocolate, Milk Chocolate, Vanilla, Rainbow Chip, Cream Cheese and Cherry!

Soda Pop- Sprite, Sierra Mist, Mug Root Beer. (also good for the flu or an operation!)

PERFECT PRETZEL BREAD (GLUTEN-FREE, YEAST-FREE, DAIRY-FREE, SOY-FREE, SUGAR-FREE, EGG-FREE, CORN-FREE)

5 1/4 c. rice flour
3/8 c. tapioca flour
1 T. guar gum
3/4 t. baking soda
3/4 t. cream of tartar
2 1/2 t. salt

Combine.

Add...

1 box (4 c. or 32 oz.) Almond Breeze almond milk (Other nut milks or rice milks might work too.)
2-3 c. water
3 T. oil (I like to use cold pressed walnut oil.)
flaxgel, (Make by combining 1 1/2 c. water with 6 T. flaxseed meal, and then heat in pot until it bubbles. This is an egg replacer!)

Stir it all together. Drop and spread pancake-sized circles onto PANS LINED WITH PARCHMENT PAPER. (Or it sticks terribly!) Bake at 425 degrees F. until done, around 10 minutes.

This bread kept me alive when my body was rejecting most all other foods! It tastes like pretzels to me, especially if eaten alone with salt! It freezes well, and is delicious warmed til crispy in a hot oven, or microwaved.

GLUTEN FREE NORWEGIAN PANCAKES

10 eggs
5 T. melted butter (or margarine)
3 & 1/3 c. water
1 & 1/4 t. vanilla (optional)
5 T. sugar
1 & 1/4 t. salt
3 c. rice flour
1/3 c. tapioca flour
(Can increase rice flour to 3 1/3 c. instead of using tapioca flour, but tapioca flour seems to help soften them!)

Make as you would regular Norwegian Pancakes (similar to crepes). We like to use a blender to eliminate any lumps. Cook in hot, buttered frying pans. Enjoy with fruit and whipping cream, lemon juice and powdered sugar, or just with butter and sugar!
